I'm pretty sure if Star Platinum has MFTL reactions and super precision to the point where it can grab a 1mm speeding opponent, he can safely grab the dart along the barb or in a way where he does not get pierced.
That's going by YOUR logic.
So if he explicitly says the cause of the flesh melting is from the poison, and that the stand poison enters your flesh through touch alone, then just touching the dart is enough for your flesh to melt.
No assuming he got cut by it because he went into great detail of recounting the situation. No reason for him to leave out something notable like that for Josuke, they're gathering all the information they can on Bug-Eaten so it wouldn't make sense to falsify it.
